Tinkering with the code of life is a very dangerous undertaking. We do not and never will have the requisite knowledge for riskless genetic engineering. What appears "sustainable" to us now may prove to be disastrous in the long run.
Besides, wood already is sustainable - the trees reproduce it, don't they?
What its advocates appear to mean by "sustainable" is something which allows humanity to continue destroying the planet while greenwashing our environmental crimes.
The only thing we should be taking out of the ground is edible plants, and then only in moderation and with an eye to sharing them with the other species which inhabit this planet alongside us.
